Dashi custard, uni, gold leaf
A single spoonful to open the palate. Sea urchin from Hokkaido rests on silken egg custard, finished with edible gold.
Raw
Toro tartare, caviar, crispy rice
Bluefin toro hand-cut to order, seasoned with aged soy and topped with Oscietra caviar on shards of toasted rice.
Steamed
Sake-steamed halibut, dashi broth
Wild halibut gently steamed over junmai sake, served in a clear dashi with matsutake mushroom and yuzu zest.
Robata
48-hour miso black cod
The signature. Alaskan black cod marinated for two days in sweet white miso, grilled over binchotan charcoal.
Palate
Yuzu granita, shiso leaf
A clean, ice-cold pause between savoury and sweet. Yuzu from Kochi, hand-torn shiso, a single drop of sake.
Sweet
Black sesame crème brûlée, matcha tuile
Torched to order. The bitterness of roasted sesame against caramelised sugar, with a paper-thin matcha wafer.
